One of the books that most influenced him was On Food and Cooking by Harold McGee, which questioned the fundamental rules of the kitchen and explored the science of cooking. As thick as an encyclopedia, and as factually detailed as one, molecular gastronomist Heston Blumenthal shares his extensive knowledge in the culinary arts. This book is so damn interesting, get it for that reason first and get it for the recipes that will really make you think as the second.

Kids might possibly love it, but be warned, Heston’s idea of a ‘simple recipe’ is not the same as mine. Heston Blumenthal is widely acknowledged to be a genius, and The Fat Duck has twice been voted the Best Restaurant in the World by a peer group of top chefs. Highly recommended - and definitely as a physical object where the amazing illustrations and the overall design of the book as an object can be appreciated.
