Chef Rosheen Kaul and illustrator Joanna Hu's collection mashes classic Chinese cooking with personal culinary influence collected from all over Asia. Part of my personal interest in reviewing this book, is that though I am a successful hobby baker, cakes and desserts are my passion and relatively easy for me to make but I possess an inability to successfully stir fry anything!

Note: MSG is a flavour enhancer used in East Asian cooking to intensify savouriness, and provide body and balance to some dishes. Publication dates are subject to change (although this is an extremely uncommon occurrence overall). It was interesting to read and explains well some principles I can put into practice to get close to a restaurant style stir-fry. You'll find a bounty of inauthentic Chinese-influenced dishes from all over South-East Asia, including all the best rice and noodle dishes, wontons, and dumplings.

Rosheen Kaul is head chef at Melbourne's Etta restaurant, where she cooks a menu as culturally diverse as she is. Food was a huge part of this journey; should they cling to the traditional comfort of their parents' varied culinary heritage, attempt to assimilate wholly by learning to love mashed potatoes, or forge a new path where flavour and the freedom to choose trumped authenticity? While the surface of the omelette is perfectly set, the centre is just underdone, giving way to a custardy interior when sliced open.Against my better judgement I tried it anyway in case this level of salt unlocked amazing wontons flavours I didn't know about. As immigrants with Chinese heritage who both moved to Australia as kids, Rosheen Kaul and Joanna Hu spent their formative years living between (at least) two cultures and wondering how they fitted in. It can be a little difficult to review a cookbook (especially if you haven’t made any of the recipes yet). Smacking the cucumber with the back of a knife or cleaver, or even a hammer, creates lovely nooks and crevices for the dressing to find its way into, resulting in a punchy, refreshing dish for those swelteringly hot days.
